I followed some of the alterations in the review and it worked out great.
Deep dish pie; use only 1/2 cup of milk, use only a teaspoon of rosemary, microwave the potatoes for 5 min.I also used cheddar cheese and half a small onion since I had that on hand. 40 min was not enough time for the quiche to set. It actually took mine about 1 hour.
I will definitely make this again. It was easy to make and not as heavy as other quiches that require heavy cream.

Made this several times. My husband likes it with potatoes in it. A little more substantial than just egg and cheese quiche. I, too, left out the rosemary because it just didn't seem to "fit" in the recipe. Great for any meal. Love it!!
