Ingredients
- 1 (18.25-ounce) box raisin bran muffin mix (recommended: Sun-Maid)
- 2 egg whites
- 1 1/4 cups grated zucchini (about 1 medium zucchini)
- 1/4 cup unsweetened applesauce
- 3/4 cup apple juice
- 1 teaspoon ground cinnamon
- 1 cup raisins
Directions
Preheat oven to 400 degrees F. Lightly spray muffin cups with canola cooking spray; set aside.
Combine all ingredients in a mixing bowl. Stir to combine thoroughly.
Spoon batter into prepared muffin cups, filling each 2/3 full.
Bake for 20 to 22 minutes or until tops are golden brown.

These are terrific. Not only easy to make but very moist which can be tough when making a bran muffin.

Kids will eat these! I also added a touch of nutmeg. The yummy smell filled the house and the kids ate my "cinnamon" muffins. They will never know the truth!!! Thanks Sandra!

I thought these were great! I used Kroger's "Low Fat Oat Bran Muffin Mix". It was a little short on weight (14oz so I added a 1/3 cup of self rising flour. The rest I did according to the recipe and they were moist and flavorful. A Keeper!
