Ingredients

  • 8 extra-large eggs
  • 2 tablespoons whole milk
  • Salt and pepper
  • 1 tablespoon butter
  • 1 small onion, diced
  • 4 small red potatoes, diced
  • 1 cup diced Canadian bacon
  • 1/4 cup sour cream
  • 1/4 cup prepared salsa
  • 1 bunch chives, chopped

Directions

Preheat oven to 400 degrees F.

In a large bowl, whisk together eggs, milk, salt, and pepper until foamy.

Melt butter in a cast-iron pan over medium heat. Add the onion and potatoes and cook thoroughly. Pour the eggs over the mixture.

Pull the edges away from the sides of the pan with a spatula so the eggs flow to the bottom of the pan. When the frittata is half set, add the ham.

Transfer the pan to the heated oven. Bake for 10 minutes until puffed and golden. Top with sour cream, salsa, and chives before serving.

    This Frittata is awesomely delicious!!! It is easy to make and the recipe is easy to follow. You can make this recipe as is, or is great with leftovers, or whatever veggies you may have in the frig. This is my "go to" recipe. It is a family favorite, or a Bruch Breakfast delight. Tyler Florence is the Ultimate!!!

    Tyler's basic cooking instructions are the best. Recipes like this one can be tweaked and changed into most anyone's taste. This is a little more work than a bowl of cereal but well worth the praise and appreciation you'll get from everyone. I topped it with a bit of cheese in the oven but the recipe as written is easy, delicious and versatile. If you prep your ingredients the night before, you can enjoy a great breakfast with very little work in a reasonably short time. Make extra. The leftovers can be turned into a completely different taste experience with the addition of toppings or sauces. Using the microwave will change the texture so plan accordingly.
