Ingredients
- 2 pounds cherry tomatoes
- 3 tablespoons extra-virgin olive oil
- Kosher salt and freshly ground black pepper
Directions
Heat the oven to 400 degrees F.
Place the tomatoes on a sheet pan, drizzle over the olive oil and season with salt and pepper. Roast until the tomatoes collapse, about 10 minutes.

What to do with so many cherry tomatoes from the garden? This was an absolutely perfect solution and easy to do. I tossed them with some pasta, fresh basil,cheese, more evoo, but couldn't help snacking on them while cooking the pasta. I needed a little more than 10 minutes for them to finish, but the flavor really intensifies this way.

I made this as an extra side dish for Tyler's Chicken Marsala recipe. I am use to cooking with a lot of different herbs so this seemed to be missing a little something. However, I just threw the extra tomatoes into my vita-mix with some seasoning and vola instant tomato sauce! Yummy!

I've just made another batch of these. I had tomatoes that were a little too acidic so roasting them this way makes them more usable. Great on a salad, in pasta, as a garnish. Just tons of uses, and they always have great flavor when roasted this way.
