Pistachio Biscotti
These pistachio biscotti are anything but ordinary — the warm, floral spice of cardamom and the bright zest of orange take the classic Italian cookie in a fragrant direction. Crunchy and nutty with just the right sweetness, they’re perfect for dipping into coffee, tea or even a little after-dinner dessert wine. They also keep beautifully, making them a lovely treat to gift or to keep stashed in the cookie jar for whenever a little something special is needed.
Carrot-Ginger Biscotti
Carrots add vibrant color and a hint of sweetness to these crunchy, better-for-you biscotti. Cinnamon, turmeric and ginger add warmth while coconut and golden raisins add chewy pockets of sweetness. A sprinkle of turbinado sugar adds a final sugary crunch on top. These biscotti will keep for up to a week in an airtight container, making them perfect for lunch boxes, snacks and coffee breaks.
Date, Pistachio and Dark Chocolate Biscotti
Chopped dates, rich in antioxidants and full of vitamins and fiber, provide most of the sweetness in these lower-sugar biscotti, while pistachios add a bit of crunch (see Cook’s Note). Tossing the dates with a little flour helps keep them distributed throughout the dough, giving you a sweet chewy bit in every bite. A drizzle of dark chocolate on top elevates them to the next level. With just 2 grams of added sugar per cookie, these biscotti are the perfect little treats any time of day.
