This carrot cake is one of my family’s all-time favorite bakes, and for good reason! Warm spices like cinnamon, nutmeg, and ginger give this cake the cozy, nostalgic flavor you expect from a classic carrot cake. It’s almost a cross between a carrot cake and a coconut cake, thanks to the shredded coconut and chopped nuts folded into the batter. They add wonderful texture and a buttery nuttiness that perfectly complements the sweet, earthy carrots. The frosting is everything you want in a classic cream cheese frosting-rich, creamy, and perfectly tangy, but mascarpone lightens it with its silky texture, while a squeeze of fresh lemon juice adds just the right amount of brightness. For an extra special finish, coat the outside of the cake with sweetened shredded coconut, chopped pecans, or a combination of both for a beautiful presentation and even more texture.
