Ingredients

  • Wooden skewers
  • 2 pounds boneless chicken breast, cut into chunks
  • 3 tablespoons minced garlic
  • 1/2 cup sliced green onions
  • 2 tablespoons chopped cilantro leaves
  • 2 tablespoons minced lemongrass
  • 2 tablespoons curry powder
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 lime, juiced
  • 1 tablespoon smoked paprika
  • 1/4 cup chicken stock
  • 1 teaspoon coarsely ground black pepper
  • 2 tablespoons canola oil
  • Steamed white rice, for serving

Directions

Soak wooden skewers in water for at least 30 minutes.

In a large bowl, add the chicken and all the remaining ingredients and mix well. Cover with plastic wrap and refrigerate for 2 hours or overnight. Remove the chicken from the marinade and thread onto the wooden skewers.

Preheat the grill to medium.

Put the skewers on the grill. Cook for 2 to 4 minutes, then flip and cook for another 2 to 4 minutes. Remove the chicken from the skewers to a serving platter and serve with white rice.

    What a Flavor Punch!

Rated: 5 stars out of 5
Loved those Curry Chicken Skewers! Not being accustomed to cooking with curry, or island flavors for that matter, this dish... was attention-getting and superb! I've made it several times now, and it is outstanding every time. If there are leftovers we have them as appetizers the next day. Aaron, you are an inspiring chef -- keep those recipes coming!Read more

    Huge hit!

Rated: 5 stars out of 5
We made this last night and it was a huge hit! I used whole chicken thighs instead of skewered breast. Also, only had... regular paprika which seemed just fine. Can't wait to make it again. Yummy!Read more

    Very Good Curry Chicken

I made this over the weekend. I marinated the meat overnight. The recipe was easy. Instead of grilling, I did cook in the... oven. This turned out well. Very flavorful!Read more

    Outstanding!

Rated: 5 stars out of 5
I can't believe some people didn't think this recipe was over the top. Go figure. It was so fantastic. I did the meat the... day before. I also made the salsa, which I am making again Labor Day to go with my barbecued ribs. This flavor combo was spot on, Aaron, and you are an awesome chef. Keep 'em coming. Read more
