Ingredients

  • 1/2 pound unsalted butter, softened
  • 1 tablespoon minced garlic
  • 2 limes, juiced
  • 2 tablespoons chopped cilantro
  • 2 tablespoons rocoto chile paste
  • 1 teaspoon ground cumin
  • Salt and pepper
  • 4 ears fresh corn

Directions

Preheat grill on high.

In medium mixing bowl, combine the butter, the juice of the 2 limes, cilantro, chile paste, and cumin. Season with salt and pepper. Mix well and set aside.

Peel the ears of corn and on the hot grill, grill the corn until charred nicely on the outside. Serve with a spoonful the flavored butter on top.

    This recipe was awesome! The market I went to didn't have the right chili paste, so I got Sambal Oelek in the Asian section. They didn't have the Cotija cheese either, so didn't use cheese at all. The corn with this butter was amazing! My mouth is watering thinking about it!

    The reviewer below who offered a fat-free recipe for chile lime for corn on the cob rated this recipe 3 stars because the recipe contains butter, disproportionately pulling down the average rating for the recipe. While I appreciate the healthful alternative, it is unfair to fault a recipe for "chile lime butter" for having butter in it. Perhaps it would help if the ratings and reviews section allowed comments or reviews without ratings. I am offering this rating with 5 stars without having yet tried the recipe in order to get the rating to more nearly accurately reflect the ratings of the cooks who actually tried the recipe.

    I'm delighted to have found this recipe for chile lime butter. It is a terrific complex balance of flavors. I liked the leftovers even better to smear on cheese pupusas the next day, and let me tell you, it was the bomb. It puts pupusas into a whole different realm. I will be trying this butter on all kinds of things. I bet it would be great tossed with hot fried chicken wings. It reminds me a little of Tyler Florence's Thai chicken wings, which are extremely good, too.
    P.S. People like Christine in Fountain Valley should not review recipes if you haven't prepared the recipe. Its not fair to anyone and it just messes up the ratings and its insulting to Aaron Sanchez and it makes you look like an idiot. Please go find another way to make yourself annoyiing away from this site.
