Ingredients

  • 1/2 pound unsalted butter, softened
  • 1 tablespoon minced garlic
  • 2 limes, juiced
  • 2 tablespoons chopped cilantro
  • 2 tablespoons rocoto chile paste
  • 1 teaspoon ground cumin
  • Salt and pepper
  • 4 ears fresh corn

Directions

Preheat grill on high.

In medium mixing bowl, combine the butter, the juice of the 2 limes, cilantro, chile paste, and cumin. Season with salt and pepper. Mix well and set aside.

Peel the ears of corn and on the hot grill, grill the corn until charred nicely on the outside. Serve with a spoonful the flavored butter on top.

    Rather than using corn on the cob, I use canned corn and prepare this dish in a frying pan. It comes out like a tasty corn... salsa - a big hit in my Mexican family. When I serve it, I cut up avocados and scallions to place on top. Yummy!Read more

    I haven't made this version and I probably won't, because I'm trying to eat healthier, and I can live very nicely without the... butter. I've been making Chile/Lime for corn on the cob for several years now, and just make a slurry of chile powder, lime zest and lime juice. It's terrific, and you don't get the calories of the butter, just great tasting corn.Read more

    I made the butter for corn and it was so delicious I tried it on other things as well. I served it with homemade rolls from... an old family receipt that is slightly sweet. Homemade honey butter made with lavendar honey was also available. The lime butter was gone at the end of the party and I still have some of the honey butter left.Read more
