Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons unsalted butter
  • 1 whole canned chipotle pepper in adobo sauce, chopped
  • 1 teaspoon adobo sauce from can of peppers
  • 1/2 teaspoon salt

Directions

Put cubed potatoes into steamer basket and place steamer into a large pot of simmering water that is no closer than 2 inches from the bottom of basket. Allow to steam for 20 minutes or until the potatoes are fork tender. Add butter to potatoes and mash with potato masher. Add peppers, sauce, and salt and continue mashing to combine. Serve immediately.

    I made these for a big family dinner, and the responses were varied depending on whether or not people could handle spicy... food. I personally loved the heat and would make them as is again just for myself. When serving to a group I will leave out the peppers or just use one and add the adobe sauce for smoky flavor without overwhelming more delicate taste buds.Read more

    I usually whip my sweet potatoes with milk and butter. They are divine and what I look forward to during Thanksgiving. ... I thought I would make a little change this year since I whip every root vegetable the same way. I used two of the peppers and 2 tsps. of the canned sauce. It was spicy just like my husband and I like most food. Unfortunately, my husband grabbed the tupperware of excess canned bland, pumpkin, and served that up by accident while I was making gravy. So no one got to taste the potatoes. There is a nice smokey flavor to this recipe, but I feel it needs something more. I think bacon would compliment the flavors nicely, but it might overdo the smokiness. Perhaps a nice apple spiced bacon would do. This is a simple, fairly healthy, and very tasty recipe. I just feel it would be dynamite if it had added complex flavors. Read more

    I don't really care for sweet potatoes, I do love this recipe though!! I put the whole can of chipotle peppers and adobo... sauce in. But I'm also the kind of person that puts a dollop of sriracha or a dash of hot sauce on almost everything I eat. If you follow the recipe to a T, it has a slight smokiness to it and not much heat. Just keep adding chilies until you find your happy medium.Read more
