Ingredients

  • 6 ounces garlic-flavored croutons
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon chili powder
  • 1 teaspoon dried thyme
  • 1/2 onion, roughly chopped
  • 1 carrot, peeled and broken
  • 3 whole cloves garlic
  • 1/2 red bell pepper
  • 18 ounces ground chuck
  • 18 ounces ground sirloin
  • 1 1/2 teaspoon kosher salt
  • 1 egg

For the glaze:

  • 1/2 cup catsup
  • 1 teaspoon ground cumin
  • Dash Worcestershire sauce
  • Dash hot pepper sauce
  • 1 tablespoon honey

Directions

Heat oven to 325 degrees F.

In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.

Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.

Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.

    This meatloaf recipe is phenomenal! I don't cook very often, so I wasn't sure about the difference between sirloin and chuck... and the meat case didn't indicate which was which (it only had the leanness to fat ratio); but, my butcher explained that sirloin will generally be 90/10 and chuck is usually the 80/20 ground beef. I thought that was very informative. At any rate, this is the best meatloaf recipe ever. My boyfriend and I love comfort food and this hits the spot! The glaze was so delicious and the cumin added the same flavor that makes me love Arabic food so much. The spices in the meatloaf are intense and really bring out the flavor of the meat. I really like that that little bit of kick that the chili and cayenne give the meat. There were a few things I did differently - I added a pinch of marjoram to the dry ingredients and I didn't put the bell peppers in the food processor. My boyfriend really likes bell peppers, so I just gave them a fine dice and added them in that way. It also took 1 hour and 10 minutes to get the temperature to 155 (at 350).Read more

    I've never been a big meatloaf fan but my boyfriend is so I thought I would give this recipe a whirl. It's incredibly easy to... follow and delicious! I used half lean beef and half ground turkey and added an extra egg after reading the other reviews. I also sprayed a few muffin tins with canola oil and cooked mini-loaves to speed up the time. After 30 minutes at 350 I ended up with about 18 "meat muffins". Definitely use the glaze!Read more

    I have NEVER been a meatloaf fan, until now!!! OMG!!!! This meatloaf was fantastic!! Easy to make, flavorful, moist and... makes a beautiful presentation! I even took pictures of it and sent it to my friends. The only thing I will do differently next time is to double the recipe. A lot of recipes get printed at my house, but this one is going into my "favorite recipe" folder. This meatloaf is definitely GOOD EATS!!Read more
