Baked Cheese Grits

Ingredients

2 eggs, beaten

1 1/2 cups milk

2 tablespoons melted butter

3 cups cooked grits

1 1/2 cups grated white Cheddar, plus 1/4 cup for top

1/4 teaspoon paprika

Pinch cayenne pepper

Salt and white pepper

Directions

  1. Preheat oven to 400 degrees F. 
  2. Butter, or spray with cooking oil, a 1 quart oval gratin dish. Whisk eggs; add milk, melted butter and fold into grits with cheese and spices. Bake 40 minutes until browned.

the baking temp of 400 is too high for a milk, cheese and eggs souffle type dish. The eggs "scrambled" and liquid separated from the dish. I think the cooking temp should be closer to 325. <br /> <br />The dish had good flavor, however.
