Ingredients
- 1 cup balsamic vinegar
- 1 tablespoon honey
- Salt and freshly ground black pepper, optional
- 3 peaches, halved and pitted
- Canola oil
- 12 thin slices proscuitto
- 8 basil leaves, cut into thin ribbons
- Extra-virgin olive oil
Directions
Put the vinegar in a small saucepan and bring to a simmer over high heat. Cook until thick and syrupy, stir in the honey and season with salt and pepper, if using. Let cool slightly.
Brush the peach halves with oil and season with salt and pepper, if using. Place on the grill, cut side down and grill until golden brown. Turn over and grill for 1 minute longer. Remove the peaches from the grill and drizzle with the balsamic. Wrap or stuff each half with a slice of the prosciutto. Sprinkle the basil over the top and drizzle with olive oil.

These are SO good. Definitely chiffonade the basil rather than using a whole leaf.

A really great recipe that takes advantage of summer flavors. Large pieces of peach, prosciutto and basil are fun, but might be difficult for some to eat as finger food - smaller segments would be advised if served sans fork and knife.
