Brett Fava Beans

Ingredients

2 pounds fava beans

3 tablespoons butter

2 medium shallots, minced

2 tablespoons salt

1 tablespoon freshly ground black pepper

1/2 cup shredded Parmesan

Directions

  1. Bring a large pot of water to a boil over medium heat. Add the fava beans and cook until tender. Drain the beans and let cool, then peel.
  2. Melt the butter in a pan over low heat and cook shallots until translucent. Add the fava beans and cook for 3 minutes. Stir in the salt, pepper and Parmesan. Transfer the beans to a serving bowl and serve.

I made these just so I could post a review. These are okay - nothing special, but a perfectly serviceable use of fava beans. You really can't go wrong with me if you include Parmesan cheese, so that's always a plus. However, call me a stickler, but there's no real reason to call these Brett Fava Beans aside from the fact that Fava sounds slightly like Favre. Favre is from Mississippi, one of the homes of Cajun cuisine - but there's nothing even remotely Cajun about this dish, and it wouldn't have been hard to include something.
