Hardly any recipes on this website for shrimp parm.  This recipe does somethingbetter however that other parmesan recipes don't do--after breading protein, why pour sauce all over it, then the coating only gets soggy.  Best to put the sauce UNDER it, and this recipe smartly does that, even puts cheese over the sauce too.  What I would do is then put mozz on top of the shrimp (or protein), and then more sauce on top of that.  The cheese protects the breading from the sauce on top, won't get soggy.  Often I don't even bread the protein, makes it lighter, less carbs.
