Ingredients

  • 1/2 cup apple juice, microwaved until warm
  • 1/4 to 1/3 cup peanut butter
  • 2 tablespoons soy sauce or tamari, your preference
  • 2 teaspoons red curry paste
  • 8 to 10 chicken tenders (about 3/4 to 1 pound total)

Directions

Preheat grill to medium-high heat.

In a small mixing bowl, whisk together the apple juice, peanut butter, soy sauce and the red curry paste.

Add the chicken tenders to the heated grill and cook, about 3 to 5 minutes per side.

Remove from the grill and top with the sauce.

    This recipe is very easy to make and tasty! It makes for a quick no-fuss appetizer. I enjoy the taste of peanut butter so I used 1/3 cup of creamy JIF.

    This recipie was just ok. it was really easy and really fast but not that flavorful. I dont think we will make it again.

    I made this recipe and put the chicken over a bed of Jasmine Rice and then drizzled the sauce all over the whole thing. It was so good even the kids ate it! I did use about a 1 Tablespoon of hot curry POWDER instead of paste as I thought the paste would be a bit too spicy for my children. Really good recipe, and the rice makes a nice touch for a complete meal!
