Ingredients
- Kosher salt
- 1 pound haricots verts, trimmed
- 3 slices bacon
- 4 ounces blue cheese, cut into small chunks (recommended: Shropshire)
- 1 1/2 cups toasted whole pecans, coarsely chopped
- 1/4 teaspoon freshly ground black pepper
Directions
Bring a large pot of salted water to a boil over high heat. Add the haricots verts and cook for about 2 minutes. Remove the beans from the water and immediately place in a bowl of ice water. Remove the haricots verts from the ice water and set aside in a medium bowl.
In a large saute pan, over medium heat, cook the bacon until crisp. Remove the bacon and place on paper towels. Add the beans to the bacon drippings and cook over medium heat for 2 to 3 minutes. Add the blue cheese and toss just until it starts to melt. Break the cooked bacon into bite-size pieces and add to pan. Finish by stirring in the toasted chopped pecans. Season with the freshly ground black pepper and just a tiny pinch of kosher salt. Serve immediately.

Amazing recipe! I altered it a little bit to use what I had on hand at home; I used crumbled feta cheese instead of blue cheese. It was one of the best side dishes I have ever served. Even my 5 & 2 year old sons ate it! I will definitely make again, especially for the holidays. It looks beautiful when served.

hi cLAIRE!! thank y0u so000ooo much for the rosemary pork tenderloin! i never really cook so i was just so nervous for my husband to try it! he is just too hard to impress when it comes to cooking because he always deals with good food being a F & B Director his whole life. I am so proud to cook this first meal for him with the nutty greens. It was perfect especially if it's cooked with love and passion..looking forward for more recipes! n0w i can't wait for my mom-n-law to visit and be impress!!

I made the entire meal from this episode when my in-laws came over for dinner. All of them were fantastic! The green beans are a favorite at our house; my husband even requested it for his birthday dinner (along with Paula Deen's tomato pie, Alton Brown's grilled pork tenderloin, and The Neely's Memphis Mud Pie. The combination of salty bacon, crunchy pecans, and tangy blue cheese is AWESOME with the green beans!
