Ingredients
- 3/4 cup sugar
- 2 teaspoons self-rising flour
- 1/2 teaspoon nutmeg
- 1/4 stick butter or margarine, melted
- 3 eggs, beaten
- 1 teaspoon vanilla extract
- 1 cup milk
- 1 cup fresh or frozen grated coconut
- 1 unbaked 9-inch pie shell
Directions
Preheat oven to 375 degrees. In a bowl, blend together the sugar, flour and nutmeg. Add the butter, eggs, vanilla and milk. Mix well. Stir in the coconut. Pour into the pie shell and bake for 30 minutes or until firm.

This recipe was horrible. It wasn't really creamy or custard like at all. I'm actually surprised so many people gave this a good rating. This is my s/o's favorite pie, and he didn't like it at all. I didn't like it either and we just decided to toss it. I would never make this recipe again.

Firt time I have ever made a coconut custard pie - just gave my husband a slice - he says it's a keeper. The only changes I made after reading the reviews - had no self-rising flour - used cake flour. I did grate a nutmeg just two time on the grater, very little nutmeg. 30 min. in the oven and it was ready to go. As I said - this recipe is a keeper.
