Three-Ingredient Pea Soup

Ingredients

One 16-ounce bag frozen baby peas

1/4 cup olive oil 

3/4 teaspoon salt, plus to taste 

1/4 cup microgreens or any small leafy green or herb, for garnish, optional

Directions

  1. Bring 2 cups water to a boil in a medium pot. Reduce to simmer and add the frozen peas. Cook until tender, 3 to 4 minutes.
  2. Transfer the peas and cooking water to a blender and puree until smooth, 2 minutes.
  3. With the machine running, slowly drizzle in the olive oil to emulsify.
  4. Mix in the salt; taste and season with more salt if desired.
  5. Transfer the soup to bowls. Garnish with microgreens if using.

So easy and tasty! I sub'd some veggie broth for the water, but other than that followed the recipe to a T. Add some toasted bread and charcuterie toppings and you got yourself a full meal! Will definitely make again.
