Ingredients

  • 1 cup low-sodium chicken broth
  • 1 cup water
  • 1 1/4 pounds boneless skinless chicken breast halves, no more than 3/4-inch thick
  • 1/4 cup sliced almonds
  • 1/2 cup nonfat plain yogurt
  • 2 tablespoons mayonnaise
  • 1 teaspoon curry powder
  • 1 cup halved red grapes
  • 1/4 cup chopped cilantro leaves
  • Salt and freshly ground black pepper
  • 5 ounces mixed greens (about 5 cups lightly packed))
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon lemon juice

Directions

Bring the broth and water to a boil in a medium saucepan. Add chicken to broth and simmer, covered, for 8 minutes. Turn the heat off and let chicken stand in the cooking liquid, covered, until cooked through, about 20 minutes. Remove the chicken from the broth and cool completely in the refrigerator. Cut into 1/4-inch dice. Toast the almonds in a small dry skillet over medium-high heat until fragrant and beginning to turn golden, 2 to 3 minutes.

In a large bowl, stir together the yogurt, mayonnaise, and curry powder. Fold in the chicken, grapes and cilantro and season, to taste, with salt and pepper.

In a large bowl, toss the greens with the oil, lemon juice and salt and pepper, to taste. Arrange the greens on 4 individual plates, top with a scoop of the chicken salad and sprinkle with the almonds.

    Using yogurt was a great idea..I did not use Greek yogurt (I find it too dry) but it cut out a lot of the fat from Mayo!. I... added extra curry (I find curry from Asian more spicy) and less grapes but added extra cilantro...the almond slices was a great idea, too! Make sure you don't overcook the chicken or the white meat will be too dry...adding chicken broth while poaching is essential..Read more

    Next time, I think I'll use about 2/3 to 1/2 of the yogurt and mayonnaise called for in this recipe... I love the flavors,... but it's a little too creamy for me with all the yogurt and mayo. I wouldn't alter any of the other ingredients though, it was delicious. It was just the texture that bothered me. Read more

    I just finished eating a sandwich with this curry chicken salad and it was delicious!! I'm not much of a cook, but this was... really easy to make. I skipped the cilantro because I'm not a big fan of it, but I added a little bit of yellow peppers, chili pepper and extra curry powder for more flavor.     I have made several recipes for chicken salad and I can't say this is one of the best. I thought it was a little bland,... although I agree it is very healthy. I added a little extra mayo and a touch of honey after tasting the dressing, but I still thought it needed something. My family said it was good, but not great.Read more
