Ingredients
- 1 tablespoon olive oil
- 1 lemon, zested (about 1/2 teaspoon)
- 1 lemon, juiced (about 2 tablespoons)
- 2 tablespoons finely chopped fresh oregano leaves, or 2 teaspoons dried oregano
- 2 tablespoons minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 8 (4-ounce) lamb loin chops, trimmed of all visible fat

In a small bowl stir together the first 7 ingredients. Put the lamb chops in a sealable plastic bag and pour the marinade over them. Move the chops around in the bag so the marinade coats them well. Marinate for 1 hour.
Grill or broil the chops for 3 to 4 minutes per side for medium rare.

Made this for the first time tonight, and served it with a carmalized onion, potato and brussel sprout meldey. A keeper for sure and will use the marinade on other meat/poultry, as suggested by others.,

Fantastic recipe! I used the juice of a whole medium lemon (which yielded more than 2 tblspoons of juice and the zest of 1/2 a lemon and marinated it two hours longer ... and it was even more flavorful and tender. I also left a little fat on the sides (which might have made it a little more tender too.

very easy to make and delicious The only adjustment to the recipe was I cooked for 7minutes instead of 5 on each side
