You can create up to five timers

Ingredients

  • 1/2 cup pecans*
  • 1/2 cup almonds*
  • 1/3 cup pistachios*
  • 1/3 cup cashews*
  • 1/3 cup pumpkin seeds*
  • 1 tablespoon maple syrup
  • 1/2 teaspoon curry powder
  • 1/8 teaspoon cayenne (or more to taste)
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon salt
  • Cooking spray

Directions

*all nuts are shelled, unsalted and unroasted (raw)

Preheat oven to 325 degrees F. Combine nuts and seeds in a medium-sized bowl. Add the maple syrup and spices and salt and toss to combine. Spray a baking sheet with cooking spray, then transfer coated nuts to baking sheet and spread evenly in 1 layer. Bake 15 to 20 minutes, stirring once, until nuts are fragrant and lightly toasted.

    A keeper! The perfect cocktail, snacking nut recipe. Easy, healthy, delicious, versatile. In this version, I prefer fresh rosemary chopped VERY fine to the dried herb. And you can change out the spice mix to suit your fancy. Sometimes I use a combo of cumin powder, ground coriander and a touch of cayenne.

    You can also change up the combo of nuts. Sometimes I make this with all pepitas - with the cumin spice blend it is really wonderful both for snacking and for tossing into salads.

    I often find I want to use about 1 1/2 tsp more maple syrup than called for, depending on the nuts.

    For the several batches I've made, I've never cooked it as long as the recipe specifies, to avoid over baking. This is a winner recipe. I enjoyed Ellie Krieger's show when she was on air.

    Real simple and love the delicate combination of sweet, salt and spice. I scaled the recipe about 8 times and packed little boxes as holiday gifts for co workers. They loved them!
