Grilled Tuscan Steak with Fried Egg and Goat Cheese

Ingredients

  • 4 (8 ounce) rib-eye steaks
  • Salt and freshly ground black pepper
  • 2 tablespoons herbs de Provence
  • 2 tablespoons, plus 2 teaspoons olive oil
  • 4 eggs
  • 2 ounces goat cheese, crumbled
  • 2 tablespoons chopped fresh parsley leaves

Directions

Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Season the steaks with salt and pepper. Sprinkle both sides of each steak with the herbs de Provence. Drizzle with 2 tablespoons of the olive oil. Grill for about 6 to 8 minutes per side for medium-rare. Remove the steaks from the heat and allow to rest.

Meanwhile, in a medium skillet, heat the remaining olive oil over medium-high heat. Crack the eggs directly into the pan, seasoning quickly with salt and pepper. Cook until egg whites are set, about 2 to 3 minutes.

To serve: Place the steaks on 4 serving plates. Carefully place the eggs on top of each steak. Sprinkle with the crumbled goat cheese. Garnish with the chopped parsley and serve.

    While it may just be a dressed up steak and egg dish, it is a delicious one. Loved this! The dish looked great, and was so... satisfying, and very easy. I bought the herbes de Provence and they were expensive, could have made my own instead. You have to add the lavender though, it gives it such a wonderful flavor.Read more

    Herbs de Provence is a blend of spices from southern France and can be found in most supermarkets. The exact blend varies,... but it is different from Italian seasoning, as it usually includes lavender, mint, and fennel, so the taste will be sweeter and more pungent. But seriously, people, this recipe is just steak and eggs with some dried herbs and goat cheese.--nothing special at all.     I made this for my husbands birthday breaktfast, and we both loved it! Since it was just the two of us, I just halved the... amounts that were called for in the recipe and it was perfect. I was not able to find herbs de Provence, but I had Italian Seasoning in my cupboard and checked the ingredients on the back---and it was the same exact thing as what the recipe for Herbs de Provence called for! I think this would be great for breakfast, lunch or dinner! I'll def. make it again--super easy!Read more
