Ingredients

  • 1 (2-serving) package tofu shirataki fettuccine-shaped noodle substitute (recommended: House Foods)
  • 1 wedge light spreadable Swiss cheese (recommended: The Laughing Cow)
  • 2 teaspoons reduced-fat Parmesan-style grated topping, plus more for serving, optional
  • 1 teaspoon fat-free sour cream
  • Salt and freshly ground black pepper
  • Fresh parsley, for serving, optional
  • Steamed broccoli, as an accompaniment, optional

Directions

Use a strainer to rinse and drain the shirataki noodles well. Pat dry.

Place in a microwave-safe bowl and microwave 1 minute. Dry as thoroughly as possible, using paper towels. Cut noodles up a bit, using kitchen shears or a knife.

Add cheese wedge, grated topping, and sour cream, breaking the cheese wedge into pieces as you add it. Microwave for 1 minute.

Stir well and then season with salt and pepper. Garnish with parsley and additional grated topping and serve with broccoli, if using. Enjoy!

Cook's Note: Alternatively, recipe can be prepared in a skillet on the stove, over medium-high heat, until hot and well mixed.

    Quick, Easy, Tasty!!
    OK, I knew I needed to add garlic or else I wouldn't like it. So I sauteed 1 tsp. of garlic in a very small pat of butter (could use olive oil, I used 4 triangles of cheese, 1/4c. sour cream (I misread it at first, and on hand I had the real sour cream, 3 Tbsp. of parmesan, 1/4 tsp salt (maybe more, 1/4 tsp pepper (maybe more, a little milk to thin if needed. Heated some cooked chicken I had in freezer and it was quick, easy, and tasty!!! I will try the fat free sour cream next time. I used this on regular noodles because I can't find the tofu noodles here. My family liked this and I thought it was pretty tasty!.

    The noodles: some bites rubbery when chewed, other bites were just fine. Could be noodles were not cooked evenly in the microwave. More frequent stirring could help.

    The sauce: Smelled like fettucine alfredo. Tasted a little bland, but fixable with a tiny bit more salt and lots of black pepper.

    Difficulty in cooking: None, especially because I used the microwave for the whole thing!

    Bottom of the Plate: Yep, I saw it! If you want a quick (we're talking minutes fettuccine alfredo fix and don't want to feel bad about eating it, this is a decent substitute--but don't kid yourself into thinking it will taste as good as the real thing. I added frozen broccoli that I steamed using the microwave. I really liked the fact that I did it all using the microwave. A good dish to make on those hot summer days with no air conditioning. I would make this again. Try it once even just to experiment.

    HH Hippo's Tip: To be green, I used flour sack towels to dry the noodles instead of paper towels.

    This recipe was terrible, bland and flavorless. The sauce concept I think can be doctored to have more flavor without adding too many calories, but those "noodles" will not enter my home again.
