Christmas Eve Salad

Crunchy, sweet and tart, this take on a Mexican Christmas Eve salad is a refreshing side dish you need on the holiday table. Feel free to include other fruits, such as apple, pear or even pineapple!

Ingredients

1 heart romaine lettuce, chopped

5 cooked baby beets, sliced

1 1/2 cups jicama matchsticks (from 1 small jicama)

2 small navel oranges, peeled and sliced into rounds, plus 2 tablespoons orange juice

1 tablespoon fresh lime juice

1 tablespoon mayonnaise

1/2 teaspoon sugar

Kosher salt and freshly ground pepper

1/4 cup extra-virgin olive oil

1/3 cup pomegranate seeds

1/3 cup chopped roasted peanuts

Directions

  1. Put the chopped romaine in a large bowl or spread out on a platter. Add the beets, jicama and oranges.
  2. Whisk the orange juice, lime juice, mayonnaise, sugar, 1/2 teaspoon salt and a few grinds of pepper in a small bowl. Slowly pour in the olive oil, whisking.
  3. Season the salad with salt and drizzle with the dressing. Top with the pomegranate seeds and peanuts.
