Pumpkin-Ginger Smoothie

This fiber-packed smoothie gets its tang from a healthy dose of low-fat yogurt and a splash of apple cider vinegar. It's a welcome change from the rich pumpkin desserts that tempt us during the fall months.

Ingredients

1/2 cup pure pumpkin puree

1/2 cup lowfat plain yogurt

3/4 cup ice cubes

2 tablespoons pure maple syrup

1 tablespoon apple cider vinegar

1/2-inch piece fresh ginger, peeled and grated

Pinch ground cinnamon, plus more for garnish

Directions

  1. Put the pumpkin puree, yogurt, ice cubes, maple syrup, vinegar, ginger and cinnamon into a blender. Blend until very smooth. Add 1 to 2 tablespoons of water if needed to adjust consistency. Pour into a glass and dust with cinnamon.

This was tasty. Next time, however, I’ll leave out the Apple cider vinegar. It gives it a tang.
