Fresh Basil Dressing

Ingredients

1 cup loosely packed fresh basil leaves

6 tablespoons extra-virgin olive oil

2 tablespoons mayonnaise

2 tablespoons balsamic vinegar

1 1/2 tablespoons chopped shallot

3/4 teaspoon salt

Dash ground black pepper

Directions

  1. Blend the basil, oil, mayonnaise, vinegar, shallots, salt and pepper in a blender or food processor until smooth. Refrigerate until ready to use.

Triple Lindy

This dressing had a really good flavor, with the basil &amp; balsamic vinegar. It was light &amp; perfect for my taste, my husband liked it too &amp; he's a picky guy with simple taste buds. It turned out a dark green color. (Note: I had to substitute scallions for the shallots<br /><br />I will be making it again, anytime I have fresh basil. definitely try!
