Ingredients
- 2/3 cup sugar
- 4 large egg whites, at room temperature
- 2 teaspoons pure vanilla extract
- 1/2 teaspoon fine sea salt
- 1/2 stick (4 tablespoons) butter, melted, plus extra for greasing the pizzelle iron
- 2/3 cup flour
- 1 teaspoon ground cinnamon
- 1/2 cup mini chocolate chips
Directions
Preheat the pizzelle iron to medium-high heat.
Whisk the sugar, egg whites, vanilla, and salt in a large bowl until frothy. Whisk in the butter, flour, and cinnamon until blended. Stir in the chocolate chips.
Brush the pizzelle cooking surfaces with melted butter. Spoon 1 tablespoon of batter in the center of the pizzelle iron. Close the iron and cook until deep golden, about 3 minutes. Transfer the pizzelles to a cooling rack. Cool completely. Store the pizzelles airtight at room temperature.
Chef's Note: The batter can also be cooked in a preheated and lightly oiled waffle iron. Pour 1/2 cupfuls of batter into the waffle iron and cook for about 3 minutes.

I was a little leery making these, reading some of the other reviews and not having the benefit of seeing the episode in which Ms. De Laurentiis made these. But, I made them today with minimal problems, and they're delicious. Despite using a non-stick pizzelle iron, they did stick after a while. However, I found that using non-stick cooking spray solved this problem. The chocolate chips tended to gather on the grates, but I used a spatula to scrape it off. So, not quite as easy as traditional pizzelles, but worth a little extra work.

These are perfect. I used a Cuisinart pizzelle maker on setting #4. Buttered the grates every three or four batches. No sticking. No burnt chocolate chips.
