Grilled Lamb Chops

Ingredients

  • 2 large garlic cloves, crushed
  • 1 tablespoon fresh rosemary leaves
  • 1 teaspoon fresh thyme leaves
  • Pinch cayenne pepper
  • Coarse sea salt
  • 2 tablespoons extra-virgin olive oil
  • 6 lamb chops, about 3/4-inch thick

Directions

In a food processor fitted with a metal blade add the garlic, rosemary, thyme, cayenne, and salt. Pulse until combined. Pour in olive oil and pulse into a paste. Rub the paste on both sides of the lamb chops and let them marinate for at least 1 hour in the refrigerator. Remove from refrigerator and allow the chops to come to room temperature; it will take about 20 minutes.

Heat a grill pan over high heat until almost smoking, add the chops and sear for about 2 minutes. Flip the chops over and cook for another 3 minutes for medium-rare and 3 1/2 minutes for medium.

    So I have never eaten lamb in my life, let alone cooked it! But I wanted to make my boyfriend a really special Valentine's... Day dinner and lamb is his favorite, so I knew Giada would get me through it. And she did! This is a 5-star recipe for a reason! The marinade is so simple to prepare in the food processor. I let mine marinate for about 2 hours, then cooked it over a skillet just as Giada said, following her directions exactly, and the lamb came out perfectly cooked and delicious! A two minute sear per side on high heat, then a 3 minute sear per side on medium heat. I also served this with a caesar salad and Ina Garten's Rosemary Roasted Potatoes, which complimented the lamb perfectly. My boyfriend was impressed, and he's a butcher, so he knows his meat. I definitely recommend this to anyone new to lamb, or anyone who loves lamb and wants a simple yet flavorful meal.     I was preparing a nice dinner for my boyfriend and thought of doing this recipe since he loved lamb chops. I did Elton... Brown's garlic mashed potato and Giada's grilled lamb chops. Everybody loved this recipe that I was so pleased beacause even my so critical boyfriend said it was really good.     My husband is Armenian and cooks the most amazing lamb dishes, but mostly with ground lamb or Kabobs. This was my first... attempt at cooking lamb and it was a smashing success!! I made it with Giada's salad with smoked mozarella and sun dried tomato cigars, and a simple cous cous with peas and it was sooo easy and delicious.
