Ingredients

Couscous:

  • 2 tablespoons olive oil
  • 2 cups Israeli couscous (or barley or orzo)
  • 4 cups low-sodium chicken broth
  • 1/4 cup chopped fresh flat-leaf parsley
  • 1 1/2 tablespoons chopped fresh rosemary leaves
  • 1 teaspoon chopped fresh thyme leaves
  • 1 medium green apple, diced
  • 1 cup dried cranberries
  • 1/2 cup slivered almonds, toasted, see Cook's Note

Vinaigrette:

  • 1/4 cup apple cider vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup olive oil

Directions

For the couscous: In a medium saucepan, heat the olive oil on medium-high heat. Add the couscous and cook, stirring occasionally until slightly browned and aromatic, about 3 to 5 minutes. Add the chicken broth and bring to a boil. Simmer for 10 to12 minutes or until the liquid has evaporated. Transfer the cooked couscous to a large bowl and set aside to cool. Add the parsley, rosemary, thyme, apple, dried cranberries, and almonds.

For the vinaigrette: In a small bowl, combine the vinegar, maple syrup, salt, and pepper. Whisk in the olive oil until smooth. Pour the vinaigrette over the couscous and toss to coat evenly.

Cook's Note: To toast the almonds, preheat the oven to 350 degrees F. Arrange the almonds in a single layer on a baking sheet. Bake for 8 to 10 minutes or until golden brown. Cool completely before using.

    I really enjoyed this when I made it. My husband wasn't into the blend of sweet and savory flavors, but I thought it was... terrific! Dried herbs are definitely no substitute for fresh herbs in this recipe. I will make this again!Read more

    I just made this for supper. It was delicious! We all loved it. I had some ground venison in the fridge and sprinkled a... couple handfuls into it. I used pine nuts instead and a gala apple. Also currants cause i had no dried cranberries. It was absolutely just delicious. We didn't have a whole lot of food in the house so I just used regular couscous with orzo to clean out the cupboards. But when I get to the grocery store, I will definetely do everything exact. I will make this again!Read more

    I made this the other night and everyone LOVED it! I had to substitute the dried cranberries for mixed berries (cherries,... strawberries and blueberries), a red pink lady apple for the green apple and balsamic vinegar for the apple cider vinegar.     I read the reviews before I made this and so the only changes I made were to add less salt and added a little more maple... syrup. MISTAKE! I'm not a syrup lover, I'll admit, but I enjoy it with my waffles or pancakes. However, this apparently does not extend to couscous. I think with a different dressing, the couscous would have been better. I also think it was much better warm than cold. I'll try a similar method of preparing the couscous, but this time I'll keep it warm and leave out the syrup!Read more

    "Delicious ..Its a Keeper"

    All the right flavors coming through, I call it fresh and clean tasting. We enjoyed it and I will make it again and again! !... I did however cut way back on the salt and upped the olive oil a little as i found the ACV a little too overpowering for our tastes as well as my guests.Read more
