Ingredients

  • 4 (6-ounce) salmon fillets
  • 1/4 cup extra-virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon minced fresh rosemary leaves
  • 8 lemon slices (about 2 lemons)
  • 1/4 cup lemon juice (about 1 lemon)
  • 1/2 cup Marsala wine (or white wine)
  • 4 teaspoons capers
  • 4 pieces of aluminum foil

Directions

Brush top and bottom of salmon fillets with olive oil and season with salt, pepper, and rosemary. Place each piece of seasoned salmon on a piece of foil large enough to fold over and seal. Top the each piece of salmon with 2 lemon slices, 1 tablespoon of lemon juice, 2 tablespoons of wine, and 1 teaspoon of capers. Wrap up salmon tightly in the foil packets.

Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Place the foil packets on the hot grill and cook for 10 minutes for a 1-inch thick piece of salmon. Serve in the foil packets.

    I didn't have any rosemary on hand so I used thyme instead. I also used white wine (instead of marsala). It was really good!... Baked it at 400 degrees for 15 minutes as some other people did. That was the perfect time/temp, the fish came out perfectly cooked. One suggestion - I noticed a couple people commented on whether or not to serve the fish in the foil... I personally am not a fan of giving people aluminum foil on their dinner plates, but if you are making it in the oven, you can make the recipe the same way but use parchment for the packets instead of foil. That makes for a really nice presentation. Read more

    It's not summer, so I did not grill this, but baked it in the oven for 15 minutes at 400. I was anxious to try this after... reading the good reviews, but when I opened it, I was disappointed to see how it looked like a boiled piece of fish. It had too much juice and my fish tastes boiled, not baked. Even if I grilled this, the juices and wine would've been too much and I would've had the same results. I have had better salmon just with salt and pepper without all the juices and baking it in the oven. This recipe took away all the oils from the salmon (which makes salmon so good!) and I was very disappointed. I tried many recipes this week and this one was the worst one of all!Read more

    I don't typically like salmon, but want to eat it for its health benefits and versatility. This recipe makes me want to eat... salmon more often. The lemon and capers cut the fattiness of the meat and cooking the fish in foil takes the guesswork out of cooking times (10 minutes and the salmon was perfectly done) and allows for easy cleanup. This dish works well for a quick, weeknight meal or for entertaining because it is healthy, elegant, easy and delicious! Read more
