Ingredients

  • 3 tablespoons olive oil
  • 1 onion, sliced
  • 1/4 pound cremini mushrooms, trimmed and quartered (about 14 mushrooms)
  • 1 1/2 pounds green beans, trimmed and slice into 1-inch pieces
  • 2 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup white wine
  • 1/2 teaspoon red pepper flakes
  • 1 bunch kale (1/2 pound), rinsed, stemmed, and roughly chopped
  • 2 tablespoons lemon juice (about 1/2 a lemon)
  • 3 tablespoons finely grated Parmesan

Directions

Warm the olive oil in a large, heavy saute pan over medium-high heat. Add the onions and cook until translucent, about 4 minutes. Add the mushrooms, green beans, salt, and pepper and cook for 2 minutes. Add the wine and continue cooking until the green beans are almost tender, about 5 minutes. Add the red pepper flakes and the kale and continue cooking until the kale has wilted, about 4 to 5 minutes. Add the lemon juice and the Parmesan cheese. Toss to coat and serve immediately.

    Loved this recipe when I saw it on t.v. I knew I was going to make it one of these days. Lately I've been hearing so much... about how healthy kale is and this was a great starter recipe for me to make it. Otherwise I wouldn't know what else to do with it. But, it is a delicious recipe. I watch so many cooking shows and when I saw this recipe being done on t.v. I knew it was going to be great and it was. My kids liked it a lot too.     I cooked the green beans a little longer than stated, because I thought they needed it. I turned out great and everyone... loved the green bean/kale combo. The red pepper flake gave it a nice kick and the parmesean brought the dish together nicely. I used 1 teaspoon of salt since the parmesean is salty and it was perfect.Read more

    I made this with red bell pepper and tear drop tomatoes because I did not have green beans and mushrooms. It was wonderful,... personally i thought it was better, the red bell pepper has so much flavor. These ingredients also added beautiful color for an eye appealing dish. I made sure i did not over cook the kale and I was very generous with the parmesan cheese. Also Lemon, I squeezed half a lemon which also gave the flavor a huge fresh punch of yum!     This recipe was delicious; I think the lemon really added a nice kick. It tasted fresh.
