Ingredients

  • 1 cup Guinness stout(or any stout beer)
  • 1 cup whole milk
  • 2 cups cream
  • 2 ounces glucose syrup
  • 1 cup sugar
  • 1 cup egg yolks

Directions

Bring beer, milk, cream, glucose, and sugar to a boil, drizzle into the egg yolks while whisking vigorously. Heat to 185 degrees F stirring constantly and pour through a fine seive and chill over an ice bath. When ice cream base is cold, freeze in an ice cream machine.

    This recipie takes some skill to make (as I, an experienced cook did have some problems), but the flavor is worth the effort.

    Excellent Recipie for Beer Lovers

    If you love Stout beer as I do, this is a Must have in the freezer. We made up a batch for the SUperBowl (2/6/2005) and it... was a hit! We didnt use Guinees as the recipie called for, but a local brew called Saint Arnold Winter Stout. It is a slightly sweeter, maltier stout which worked well for this recipie. I highly reccomend it!Read more
