Ingredients

  • 1 tablespoon oil
  • 1 small carrots, diced
  • 1/2 celery rib, diced
  • 1/2 red bell pepper, diced
  • 5 snap peas, diced
  • 1/2 cup diced red onion
  • 1/2 cup mung beans, cut in 1/2
  • 2 chicken breast, diced
  • 6 ounces Apricot Sesame Sambal Szechwan Sauce, recipe follows
  • 5 fried wonton skins
  • 6 iceberg lettuce leaves
  • 2 tablespoons diced green onions
  • 2 tablespoons crushed, unsalted peanuts
  • Black sesame seeds, for garnish

Directions

In a medium saute pan over high heat, add oil. Add vegetables, and chicken, saute for 45 seconds. Deglaze with sambal sauce for 30 seconds.

Add wonton to lettuce cup, pour chicken and veg mix into cup, top with green onions and peanuts. Garnish lettuce cups with black sesame seeds.

Apricot Sesame Sambal Sauce:

  • 1/2 cup soy sauce
  • 3 tablespoons minced garlic
  • 3 tablespoons minced ginger
  • 3 tablespoons sambal hot sauce
  • 3 tablespoons apricot preserves
  • 1/4 cup rice wine vinegar
  • 3 tablespoons hoisin sauce
  • 1 teaspoon minced cilantro
  • 2 teaspoons sesame seeds
  • 1 teaspoon sesame oil

Mix all ingredients thoroughly. Shake before serving.

    I am a Big Fan of Guys, This recipe rocked! Love the sauce. Made a birthday Luncheon for my work, everyone wanted... recipe.     Almost Better than Our Local Asian Restaurant!

    Our local Asian restaurant has the best lettuce wraps we have even had. These came pretty close. Using the comments from... the other reviews (dice veggies in a food processor, reduce the sauce, cook chicken and vegetables separately, use half the amount of sauce) really made a difference. We also used toasted pine nuts and chopped green beans instead of the peanuts and mung beans. Adding chopped water chestnuts and sauteing with the veggies added nice crunch. Definitely a recipe we will make again, especially for company.Read more

    Excellent Lettuce Cups but some quick suggestions..

    This is a great recipe but try these few suggestions to make it even better: 1. Cook the chicken in batrches in a small pan... - you want it brown. 2. Put the chicken and vegi's in a food processor and pulse quick and only a few times to create a large dice. 3. Meanwhile reduce the sauce then add the chicken and vegi dice while stiring over medium heat. 4. Toast the peanuts in a pan then add them to the mix. 5. Break up the wontons before placing them on the lettuce. For some real flavor you can always use some coconut milk to cook the chicken (similar to a Thia flavor bundle).Read more

    I loved the flavor in this dish and it was definitely a hit at my boyfriend's birthday dinner! However, next time I'll cut... the sambal hot sauce down to a 1 1/2 tbs. I'm all for heat but I felt I lost some of the other flavor with 3 full tbs! Otherwise, awsome work Guy!!Read more

    We has a variation of this at a fantastic restaurant in Evergreen, CO and have been searching for a good home version ever... since. This recipe is great. Lots of veggies mix well with the chicken and the sauce has a nice zip to it. The wantons add a nice crunch but if don't want the hassle just grab chow mein noodles. When getting the sambal sauce make sure it's SAUCE and not PASTE. If you do get paste, which is what my grocery store has, start off with 2 teaspoons. Mix the sauce, taste, and increase incrementally to your tastes.Read more
