Ingredients
- Small handful fresh mint (about 10 leaves)
- 1 cup ice cubes
- Splash simple syrup (equal parts sugar and water, heated until sugar dissolves, cooled)
- 1/4 cup apple juice
- 1/3 cup vodka
- 2 red apple slices, for garnish
- 2 green apple slices, for garnish
Directions
In a tall glass, crush the mint leaves with a muddler. Top with the ice, simple syrup, apple juice and vodka. Garnish with red and green apples slices and serve.

I don't really like Mojito's so I used alil less mint...I thought it was great!

Loved it. Perfect way to use up a couple of those apples we picked! I wanted to note too that instead of using a sugar/water simple syrup, since I am a beekeeper I nuked a couple tablespoons of water (not to boiling, just hot to the touch and added a similar amount of honey to it and stirred to make a honey simple syrup. I then used that to make the mojito.

If you like the fresh apple taste not that fake syrupy foo-foo crap this is the best!!!!
