You can create up to five timers

Ingredients

  • 1/2 pineapple, cored, peeled and cut into 1/4-inch slices
  • 1 mango, deseeded and cut into 1/4-inch pieces
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 tablespoon chopped cilantro leaves
  • Salt
  • 1/2 jalapeno, seeded, minced
  • 1/2 red onion, diced
  • 1/2 Anaheim chile, roasted, seeded and diced
  • 1/2 red bell pepper, roasted, seeded and diced

Directions

Heat grill or grill pan to high.

Place pineapple and mango on grill for 30 seconds to 1 minute or until desired grill marks are achieved. Let cool and dice.

In a medium mixing bowl combine honey, lime juice, cilantro and season, to taste, with salt. Add remaining ingredients and toss. Let sit for 1 hour before serving.

    Made this to take to an office function to serve with tortilla chips. I didn't have time to roast the fruit so left the mango out. It was delicious and have had many requests for the recipe. My family also likes it...even my daughter who claims she doesn't like pineapple. This will be a recipe that will get used over and over. Can't wait to try it with grilled fish and fish tacos.

    I really liked this salsa! I need to figure out my pepper roasting technique a bit, but all in all very good. I think that people looking for a good homemade salsa will like this one. Next time I might do more honey for sweetness.

    I just had this at my friends house today and I had to have
    the receipe. Wonderful, excellent, superior taste. You dont need
    salad dressing if you serve this on top of you salad. Its so versitile that you can do almost anything you want to it. You can make a meal out of it by adding grilled chicken or fish or even just beans. I think its a wonderful dish for the summertime. I urge anyone to make this and enjoy.
