Ingredients

  • 1 pound broccolini
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • Pinch of freshly ground black pepper

Directions

Wash and trim the broccolini and steam for 5 minutes, until it is crisp yet tender. Drain.

In a small bowl, whisk together the oil, zest, lemon juice, salt and pepper. Drizzle the dressing over the broccolini and toss to coat.

Note: variations: 1/4 teaspoon crushed red pepper instead of black pepper or 3 tablespoons toasted hazelnuts chopped sprinkled on top

    I made this tonight with the Salmon Florentine and it was really good. I added the hazelnuts, which were good but I think next time I won't. It is really good just as is with the addition of the red pepper flakes.

    We love broccolini, so it was nice to find another way to make it. We did stir fry it in the oil first, then added the lemon. I doubled the lemon juice and thought it was just right, but my husband thought you could still barely taste the lemon. This serves 4, instead of 6 (unless you eat small servings of vegetables.

    This was very good. It had just the right amount of lemon zest and lemon juice. I used the crushed red pepper and over all this was a nice change for broccoli. I will always use this recipe from now on.
