Ingredients

  • 2 pounds ripe Bosc pears (4 pears)
  • 2 pounds firm Macoun apples (6 apples)
  • 3/4 cup dried cranberries
  • 1 teaspoon grated orange zest
  • 1 teaspoon grated lemon zest
  • 2 tablespoons freshly squeezed orange juice
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

For the topping:

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar, lightly packed
  • 1/2 teaspoon kosher salt
  • 1 cup old-fashioned oatmeal
  • 1/2 pound (2 sticks) cold unsalted butter, diced

Directions

Preheat the oven to 350 degrees F.

Peel and core the pears and apples and cut them into large chunks. Place the fruit in a large bowl and toss with the cranberries, zests, juices, granulated sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch baking dish.

For the topping:

Combine the flour, sugars, salt, oatmeal, and cold butter in the bowl of an electric mixer fitted with a paddle attachment. Mix on low speed for 1 to 2 minutes, or until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.

Place the baking dish on a parchment-lined sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm.

    I made this one day this fall. It was cold and rainy and I made it for my husband and my sister-in-law who weren't feeling... quite up to par. They both loved it.     This is the best apple crisp but slightly improvised recipe

    Made this for a dinner party the other night and guests raved. Did cut back the sugar, however (used Splenda ) to 1/4 cup in... apple mixture, used all granny smith apples (omitted pears), and also cut back sugar in topping to 1/2 cup white and 1/4 cup brown. Was plenty sweet and perfect. Also used only 1 T. flour in crisp since I didn't use any pears and granny smith apples are fairly dry. Had satsuma oranges in house so used one for zest & juice-that helped too for added sweetness. Yummy and will be making for Thanksgiving.Read more

    After making them for the first time, I craved them every night for about 2 weeks. The crumble...the zest...the... juices....yum!     I've made my fair share of "crisp" desserts over the years, but this is the best one I've ever made or eaten. Love the extra... flavor the cranberries give it, along with the lemon and orange zest. Will definitely be making this instead of pies for Thanksgiving this year.Read more

    Absolutely the best and tastiest crisp I've ever had. I can't stop talking about it. The hardest part was peeling and cutting... up the fruit. Went together very easy. The only change I made was to make the streusel by hand. I cut the butter into smaller pieces and used my hands to create crumbs. Great, wonderful recipe! Read more
