Ingredients

  • 2 cups cooked long-grain white rice
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup finely chopped fresh cilantro leaves
  • 1/4 cup finely chopped flat-leaf parsley
  • 1/2 teaspoon lime zest
  • 1/4 cup finely grated Parmesan
  • Salt and freshly ground black pepper

Directions

Preheat your broiler to high.

Heat the rice in your microwave until it's warmed through. Place the rice in a heatproof casserole or baking dish and toss with the melted butter, the chopped cilantro, parsley, lime zest and Parmesan. Place the dish under the broiler for 5 to 7 minutes, until the cheese is browned. Season with salt and pepper and serve.

    This was tasty. I think the next time, though, I will add even more cilantro and lime zest. It needed just a little more flavor for me. However, it got my ten year old son to eat rice any way other than plain. (That's a big plus for my husband and I, that like flavor in our rice.

    One of my favorites! My step mom makes this all the time for me when I visit. She always uses left over Basamati rice and adds a little extra cilantro and cheese. Absolutely delish!!!!

    Amazing idea! I love rice and this dish created such great flavor and texture in minutes to a normal rice dish! Accompanied with her other dish, tinga polblana (mexican pulled pork, the two worked perfect side by side! GREAT JOB! p.s. i miss you on food network :(
