Ingredients

  • 2 1/2 cups flour
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1 cup vegetable shortening
  • 2 cups sugar
  • 2 cups ripe mashed bananas (about 6 bananas)
  • 4 eggs, slightly beaten
  • 1 cup coarsely chopped walnuts

Directions

Preheat the oven to 350.

Grease and flour 2 8x4x3-inch loaf pans.

Stir together the flour, salt and baking soda in a bowl. In another larger bowl, mix together the shortening, sugar, mashed bananas, eggs and walnuts. Add the combined dry ingredients and stir only until the batter is thoroughly blended.

Pour into the prepared pans and bake 50-60 minutes, or until a skewer or straw inserted in the center of the loaves comes out clean, or with only a few moist crumbs. Remove from the oven and let cool in the pan for 5 minutes, then turn out on a rack and let cool completely.

awesome!!!! one thing i do different tho

this is probably the best banana bread ever!!! i only do one thing to change it. In stead of using the 1 cup of shortening,... i use 1/2 cup veggie oil and 1/2 cup of sour cream. This keeps in nice and moist and it will never dry out. Try it!!Read more

    Good flavor but too moist?

Rated: 3 stars out of 5
I was really looking forward to this recipe since I am obsessed with banana bread, and love trying out new recipes. I... followed the recipe to the T, baked this for over an hour, but the middle was still batter-like. What did I do wrong?Read more

    Easy and tasty recipe

I've been making this recipe for a while now. Here are a few tips: -add cinnamon to the batter -add vanilla to the... batter -don't overmix when combining dry and wet ingredients -bake one loaf at a time or else both will come out wet in the center -bake for 50-55 minutes rather than 45 -if the bread is getting too brown toward the end of baking, tent with foil Read more

this banana bread is great! i highly recommend it. as an avid baker, i've tried lots of banana bread recipes before, and... this one is definitely at the top. i'll be making it again! i recently moved to france, and people here had nevered tasted banana bread! my host family seems to like it and it was popular at my ice rink as well. i had to measure everything in grams though, which was a pain in the butt! i did change a couple of things though-- i didn't have any nuts, so i left those out and instead of shortening i used half butter, half apple sauce, so it came out extremely moist and flavorful. i also only used a cup and a half of sugar. oh, and when mixing i accidentally stirred the sugar in with the dry ingredients and it still turned out fine.Read more
