Ingredients

  • 8 ounces radishes, thinly sliced
  • 1 large cucumber, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh cilantro leaves, chopped
  • 1/4 cup lime juice (from about 2 limes)
  • 1/4 cup olive oil
  • Salt and freshly ground black pepper
  • 2 cups arugula

Directions

Combine the sliced radishes, sliced cucumber, mint and cilantro in a medium bowl. Whisk together the lime juice, olive oil, and salt and pepper, to taste, until well combined. Pour the dressing on top of the salad and toss to combine. Place arugula on a serving dish and top with tossed salad. Serve immediately.

    This was a really good light salad. I'm not a fan of mint so I left it out but the cilantro in it is so good. It was all very fresh and yummy.
