Ingredients

  • 3/4 cup plus 1 tablespoon soft dark brown sugar
  • 2 tablespoons dark corn syrup
  • 3/4 stick unsalted butter
  • 2/3 cup heavy cream
  • Serving suggestion: Vanilla ice cream

Directions

Put the sugar, syrup and butter in a pan and slowly bring to the boil, allowing the butter to melt and the sugar to dissolve. Let the mixture bubble for a couple of minutes before carefully adding the cream. Cook for another 2 to 3 minutes or until the sauce is thick, sticky and glossy.

Serve with a couple of scoops of vanilla ice cream.

    The only changes I made were I used light brown sugar, and instead of dark caro syrup, I used honey. Had to use what was on... hand!! I'm so glad I did, because this tasted just like Werthers Originals hard candy...in a sauce!! It was a great hit! Read more

    I totally love this sauce!! I made one tiny adjustment, which was to add 1/4 teaspoon or so of fleur de sel into the mix as... it cooks, and it cuts through just enough to give it a salty/sweet effect. Try it, and you'll even be digging into the cooled sauce with a spoon alone!!Read more

    My headline just about sums it all up. My mother really loves caramel/dulce de leche icecream topping and it isn't cheap to... buy!! This tastes way better than anything available in a grocery store,and it is so easy a monkey could make it.Just be very careful not to accidentally splatter any of the hot/boiling mixture on you .It is the culinary equilivant of Napalm.Read more

    I made this to go with Emeril's Apple Bread Pudding With Hard Cider Sauce - didn't fancy the hard cider sauce! I don't like... using corn syrup so I replaced it with pure maple syrup and only used about 1/3 cup of butter - you wouldn't have known I used less butter. Went really nicely with the apple bread pudding. Definifitely a big hit and one I will make many times over.Read more

    This is the tastiest sauce ever. I poured it over vanilla ice cream and it was sooooo good! I used light brown sugar and... light corn syrup and it was verrry good. I have to admit, I found myself standing there eating spoonfuls of it! On the show Nigella left hers in the fridge. I left mine on the counter overnight and had no problems the next day. But too be safe, I'd put it in the fridge and either eat it cold, YUM!, or warm it in the microwave and pour it over ice cold ice cream.Read more
