No-Bake Peanut Butter-Chocolate Cookies

Ingredients

1/2 cup (1 stick) unsalted butter

1 3/4 cups sugar 

1/2 cup milk 

3 cups quick-cooking oats 

3/4 cup peanut butter 

2 teaspoons vanilla extract 

1/4 teaspoon kosher salt 

1 cup (6 ounces) milk or dark chocolate chips 

Directions

  1. Line 2 baking sheets with wax or parchment paper.
  2. Melt the butter in a 3 1/2-quart saucepan over medium heat. Stir in the sugar and milk and bring to a boil; boil for 1 1/2 minutes.
  3. Remove from the heat and immediately stir in the oats, peanut butter, vanilla and salt, stirring to combine. Add the chocolate, stirring until just combined.
  4. Drop the dough by rounded tablespoonfuls on the prepared baking sheets. Let the cookies stand until set, about 30 minutes.

I made these tablespoon size and ended up with 45 nice sized cookies.   I used semisweet chocolate because I already had some and I flattened them slightly with the tablespoon so they looked more like cookies.  Delicious and easy!  Will make again for sure!
