You can create up to five timers

Ingredients

  • 7 pounds oxtail meat
  • 1 ounce sugar
  • 1 ounce salt
  • 1/2-ounce garlic powder
  • 1 pound onions, minced
  • 1 teaspoon allspice
  • 2 teaspoons liquid browning (soy sauce can be substituted)
  • 1 bunch scallions, minced
  • 2 tomatoes, diced
  • 1/3 cup soy sauce
  • 1/4 cup ketchup
  • 2 cans butter beans, drained
  • Cornstarch mixed with cold water, if necessary

Directions

Put all of the ingredients in a 10 to 12-quart pot except for the beans. Fill with enough water to cover everything. Bring to a boil, then reduce heat to medium or medium-low and cook for 2 hours or until tender. Add the beans and stir. Thicken with cornstarch, if necessary.

    I had never cooked oxtail before and this recipe seemed easy enough. It was the best oxtail I had ever eaten. It was to die for! So much flavor and tender. I made a few variations, instead of a chopped tomato I used some leftover salsa. Also added some thyme, a bay leaf and worcestershire sauce. I will never be afraid to cook oxtail again.

    This is the very first time I've tried oxtail. I'm so glad I used this recipe! It's delicious! Tender, flavorful! It was easy, quick and tasted wonderful. Thank you so much!
