Rabo Encendido (Cuban Oxtail Stew)

This is a traditional Cuban oxtail stew, rich and deeply flavorful, slowly simmered with aromatic vegetables, warm spices and red wine until tender and succulent.

  1. In a heavy pot, sear the oxtail in the oil over medium-high heat until browned on all sides. Add the garlic and sauté for about 3 minutes. Add 2 cups water and bring to a simmer. Cover and cook for approximately 30 minutes. Add the red wine, tomato paste, cumin, oregano, chile de árbol, paprika, black pepper, bay leaf, onion, bell pepper and tomato. Reduce the heat to low and cook until the meat is tender and the sauce thickens, about 2 hours.
