You can create up to five timers

Ingredients

  • 1 1/4 pounds smoked turkey breast, diced
  • Kosher salt and freshly ground pepper
  • 1 cup chopped scallions
  • 3/4 cup chopped celery
  • 1/3 cup mayonnaise
  • 2 tablespoons dijon mustard
  • 1 cup seedless red grapes, cut in half
  • 8 ounces provolone cheese, cut into 1/2 inch cubes
  • 1/2 cup sliced almonds, toasted and coarsely chopped (optional)
  • 3 tablespoons chopped fresh parsley
  • 2 tablespoons snipped fresh chives
  • Soft whole-grain sandwich bread, for serving

Directions

Place the turkey in a medium mixing bowl and season with salt and pepper. Add the remaining ingredients (except the bread) and combine. Serve on sandwich bread.

    It's was delicious. I substituted dried cranberries for grapes because I made it the night before and didn't want it to get soggy.
