Ingredients

  • 1 box flavored couscous (garlic or Parmesan), cooked
  • 1 can chickpeas
  • 1 red bell pepper, finely chopped
  • 1/2 Vidalia onion, chopped
  • 1 English cucumber, peeled, seeded, and finely chopped
  • 1 tomato, chopped
  • 1/4 cup fresh parsley leaves, chopped
  • 1/2 cup crumbled feta cheese
  • Salt and freshly ground black pepper
  • 1/4 cup olive oil
  • 2 to 3 limes, juiced

Directions

In a large bowl, toss all the ingredients with the olive oil and lime juice, to taste.

    I love this recipe and so does everyone else that has tried it. It's great for a pot luck lunch. It tasted even better the next day.

    Love this salad! Inexpensive & easy to make. It keeps well in the fridge, & tastes just as good the next day. I plan on making it often!

    tracy- You said it was weird, and the only thing you do different is add chx stock and add black beans as well as the chick peas, uhhh i think you need to think before you post because that was a weird post, btw this was excellent if i had such a good recipe as this i wouldnt need to be looking for somthing different
