Ingredients

  • 1 box flavored couscous (garlic or Parmesan), cooked
  • 1 can chick peas
  • 1 red bell pepper, finely chopped
  • 1/2 Vidalia onion, chopped
  • 1 English cucumber, peeled, seeded, and finely chopped
  • 1 tomato, chopped
  • 1/4 cup fresh parsley leaves, chopped
  • 1/2 cup crumbled feta cheese
  • Salt and freshly ground black pepper
  • 1/4 cup olive oil
  • 2 to 3 limes, juiced

Directions

In a large bowl, toss all the ingredients with the olive oil and lime juice, to taste.

    I used bottled lime juice (2 tablespoons) and just eyeballed the olive oil it worked out really well for me.

    I LOOOVE this recipe!! Perfect summer side dish!! I served this with come grilled kielbasa and Ina's vinaigrette broccolini... and it was a BIG hit. Only changes, I used the tri-color couscous since that's what I had on hand, using 2 cups dry, didn't measure it once it was cooked. Added tons of color. Also, I'm preggo and have a thing against limes right now, so I used one lime and doubled the olive oil and it tasted wonderful, didn't miss the lime taste at all! Warning though, I made this for just me and my hubby and it made WAAAY too much for us. We had healthy servings and I barely put a dent in the bowl haha no need to worry about going hungry with this recipe!Read more
