Ingredients

  • 3 tablespoons butter
  • 1-inch piece fresh ginger, grated or minced
  • 3 Golden Delicious apples, quartered, cored and sliced
  • 2 teaspoons lemon juice
  • 3 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon freshly grated nutmeg, eyeball it
  • 1 pint vanilla ice cream
  • 1 canister whipped cream

Directions

Heat a skillet over medium to medium-high heat. Add the ginger and apples to warm butter, squeeze a little lemon juice over the pan and saute 4 to 5 minutes. Add brown sugar, cinnamon, nutmeg to the apples and cook another 2 minutes. Spoon apples into dessert dishes and top with ice cream and whipped cream. Garnish whipped cream with a pinch more cinnamon or nutmeg.

    This was delicious!!! I'll cut the apples into smaller pieces next time to help with cooking. With so many apples there, they... didn't cook evenly, so some were softer than others. Other than that, this was perfect! So delicious and guilt free! :)Read more

    My mom makes homemade EVERYTHING and this reminded me of her apple pie minus the crust. I used McIntosh apples, Splenda brown... sugar, and Splenda sweetner along with some cinnamon. I cooked my apples until they were really soft because that's the way I like them. I made Rachael's "baseball" ice cream treats by rolling scoops of vanilla in various toppings like crushed Cinnamon Life cereal, crushed honey roasted peanuts, crushed candy bars, and crushed graham crackers. Served these warm apples over the "baseballs" and topped with caramel and whipped cream. Outstanding!!!Read more
