Ingredients

  • 1 (8 1/2-ounce) package corn muffin mix, mixed to package directions
  • Softened butter, to grease baking dish
  • 1/3 pound Monterey Jack or pepper Jack, cut into 1/4-inch dice
  • 1/2 cup frozen corn kernels
  • 2 scallions, thinly sliced

Directions

Preheat oven to 400 degrees F. Grease an 8-inch square baking dish with butter. Stir cheese, corn, and scallions into packaged mixed corn muffin batter.

Pour batter into baking dish and bake at 400 degrees F until golden, 15 to 18 minutes.

    I loved the sweetness and spicyness of the cornbread. Everyone in my family loved it! I will defintely make them again.

    Doesn't get much easier than this. I went with the Pepper Jack cheese. I like sweet cornbread, and I like spicy so this was a hit. I will try grating the cheese next time though. I think it will spread out better that way rather than have cheesy chunks.

    This is the perfect cornbread-sweet and moist! I will leave the scallions out next time, as I prefer the sweet taste of the corn without the onion flavor.
