Quick, easy, good, and satisfying! I've made these dozens of times over the years with Bacardi Light Rum and they're always a crowd pleaser. Celebrating the return of the sun and warmer weather today I found myself with only a dusty bottle of Parrot Bay Coconut Rum that's sat untouched in my liquor cabinet for 7+ years. WOW! The addition of coconut flavor brought me straight back to my honeymoon in Aruba 11 years ago! Move over Bacardi, this recipe just got a new best friend!
