Heat a grill pan over medium low to medium heat. Heat oil and garlic in a small pot over low heat. Brush 4 slices of the bread with garlic oil on 1 side. Place garlic oil side down on the grill. Top with sliced cheese, tomato and basil. Place another slice of bread on top of each sandwich. Brush sandwiches with garlic oil. Press sandwiches with heavy skillet or a brick covered with tin foil. Toast sandwiches on both sides to melt cheese.

    Are you kidding me? So Good! My supermarket did not have smoked mozz. so I used smoked gouda mixed with part skim mozz. Amazing! Will definitely do again using smoked mozz.
    I paired this with Super Quick Minestrone Michael Chairello recipe. A MATCH MADE IN HEAVEN!!!!

    This was fabulous! I added a thin breast of grilled chicken that I cooked before assembling the sandwich. I also added a LOT of basil. I cooked it on the George Foreman for a few minutes and it was great! I used crusty whole wheat rolls instead of bread, so I scooped out the inside, and I had to hold the grill down myself to make it panini-like, but it came out perfect.

    My husband and I both love this. It's healthy and quick. I didn't see the show so I don't know what's going on with the heavy smashing thing. We flip and smoosh our like you would with the regular grilled cheese.
